Strawberry Delight
INGREDIENTS:
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, at room temperature1
1/2 cups granulated sugar
2 large eggs
2 teaspoons vanilla extract
1/2 cup milk
1/2 cup pureed strawberries
DIRECTIONS: Preheat the oven to 180°C and grease cake pan. In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt. In a large mixing bowl, beat the butter and sugar together until light and fluffy. Add the eggs and vanilla extract to the bowl and beat until well combined. Gradually add the dry ingredients to the bowl, alternating with the milk, and mix until the batter is smooth. Stir in the pureed strawberries until well combined. Pour the batter into the prepared cake pan and bake for 40 minutes. Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely. Serve the cake as is, or with whipped cream and fresh strawberries on top.
