Spaghetti Carbonara

INGREDIENTS:

  • Spaghetti

  • 4 large egg yolks

  • 1 cup grated cheese

  • 8 ounces bacon, diced

  • 4 cloves garlic, minced

  • 1/2 teaspoon black pepper

  • Salt, to taste

  • 2 tablespoons chopped fresh parsley

DIRECTIONS: Cook spaghetti in a large bowl with salted boiling water until al dente. Whisk the egg yolks and cheese together in a mixing bowl until combined. Heat a large skillet over medium heat and add the bacon. Cook until crispy and browned. Add the minced garlic and black pepper and cook for another minute. Once the pasta is cooked, drain it and reserve about 1/2 cup of the pasta cooking water. Return the pasta to the pot and add the mixture to the pot, stirring to combine. Slowly pour the egg and cheese mixture over the pasta. Season the pasta with salt to taste, then sprinkle with chopped fresh parsley. Garnished with additional cheese and black pepper.
