Rise Noodles

Vegetarian low fat Noodles

INGREDIENTS:

  • 8 ounces dried rice noodles

  • 2 tablespoons vegetable oil

  • 2 cloves garlic, minced

  • 1 small onion, sliced

  • 1 red bell pepper, sliced

  • 2 cups chopped mixed vegetables

  • 2 tablespoons soy sauce

  • 1 tablespoon brown sugar

  • 1/4 cup chopped fresh cilantro

DIRECTIONS: Soak the rice noodles in a bowl of hot water for 10-15 minutes. Drain the noodles. In a large skillet or wok, heat the vegetable oil over high heat. Add the minced garlic and sliced onion to the skillet and stir-fry for 1-2 minutes, or until the onion is soft. Add the sliced bell pepper and chopped vegetables to the skillet and stir-fry for another 2-3 minutes,. Add the soy sauce and brown sugar to the skillet and stir to combine. Add the rice noodles to the skillet and toss to coat the noodles evenly with the sauce. Stir in the chopped cilantro.
