Potato Soup
Delicious and Healthy Soup
INGREDIENTS:
4 large potatoes, peeled and diced
1 onion, diced
4 cups vegetable stock
1 cup heavy cream
2 tablespoons butter
Salt and pepper, to taste
Croutons & Chives optional
DIRECTIONS: In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent. Add the diced potatoes and vegetable stock to the pot. Bring to a boil and then reduce heat to a simmer. Cook until the potatoes are tender, about 25 minutes. Use an immersion blender or transfer the soup to a blender and puree until smooth. Add the heavy cream to the pot and stir to combine. Simmer for an additional 10 minutes. Season with salt and pepper to taste. Serve hot with optional toppings, if desired.
