Veggie Stir Fry
Delicious Oriental Recipe
INGREDIENTS:
1 tbsp oil
1 onion, sliced
2 cloves garlic, minced
1 bell pepper, sliced
1 zucchini, sliced
1 cup mushrooms, sliced
1/2 cup soy sauce
2 tbsp honey
1 tsp ginger, grated
1 tsp corn starch
DIRECTIONS: Heat the oil in a large skillet or wok over medium-high heat. Add the onion and garlic and stir-fry for 2-3 minutes until fragrant. Add the bell pepper, zucchini, and mushrooms and continue stir-frying for 5-7 minutes, until the vegetables are cooked through. In a small bowl, whisk together the soy sauce, honey, ginger, and corn starch until smooth. Pour the sauce over the vegetables and stir to coat. Serve the stir-fry over rice.
