INGREDIENTS:

  • 1 head of romaine lettuce chopped

  • 1 cucumber sliced

  • 1 red onion sliced

  • 1 green bell pepper sliced

  • 2-3 ripe tomatoes, chopped

  • 1/2 cup olives

  • 4 oz feta cheese

  • 1/4 cup extra-virgin olive oi

  • l2 tablespoons red wine vinegar

  • 1 teaspoon dried oregano

  • Salt and pepper, to taste

DIRECTIONS: In a large bowl, combine the chopped romaine lettuce, sliced cucumber, sliced red onion, sliced green bell pepper, chopped tomatoes, and add the olives. In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, dried oregano, and salt and pepper to taste. Drizzle the dressing over the salad. Crumble the feta cheese over the top of the salad. Serve immediately, garnished with additional oregano and black pepper if desired.
